PRODUCCIÓN DE ÁCIDO CÍTRICO A PARTIR DE SUSTRATOS DE RESIDUOS INDUSTRIALES FERMENTADOS CON Aspergillus niger

RESUMEN

Se experimento con diversos sustratos de desechos industriales para la producción de ácido cítrico, la fermentación se llevo a cavo con cepas de Aspergillus niger, el objetivo fue seleccionar al sustrato que presente el mejor rendimiento, se evaluó la producción con la variación de la concentración del consumo de azucares (ºBrix) en el fermento de la alícuota y su cambio de pH durante el proceso, también se realizo el proceso de precipitación para verificar la producción de acido cítrico y los insumos de riesgo que intervienen durante las operaciones utilizadas para su obtención y purificación.

ABSTARCT

We experiment with different substrates from industrial waste for the production of acid citric, the fermentation was carried with strains of Aspergillus Niger, the objective was to select the best substrate for a best performance ,the production was evaluated with the variation of the concentration of consumption of sugars(ºBrix) in the ferment of the rate and Ph change, we also made the process of precipitation to probe the present of acid citric and inputs of risk involved for the operations used for their production and purification.
